LOL... So I just had to share this with everyone... Today while I was out with Gehrig little to my knowledge, Gehrig had EXPLODED in this diaper. I thought he was fussy because he was sleeping and I had woken him up to go to Target and pick up some bandages for Levi. (He scratched up his leg again playing softball)

When we got to the office I picked Gehrig up to hold him when my hand found the fall out. Being a good mommy that I am I quickly took off his onesie and got him ready to change... and that was when I found out that I didn't have any wipes or diapers in my diaper bag. BUMMER!!! However I did have a diaper rag so.... with the help of my father in law this is what we were able to do...
Diaper rag burp cloth and blue painters tape to hold it up....

This is after our super quick drive home. He was fed and changed....

Finally Graduated!!!

Ahhh.... I did it!!! I finally got my husband graduated from college!!! Whew!!! 2 years of putting him through school, and the stress of him carrying a 4.0 gpa! Man!! It's a lot of hard work! It's really a shame that there is no such thing as a M.R.S. degree! lol... (I think that's the joke from Utah)

This last Saturday Levi graduated from the University of North Texas with a BA degree in Economics and a minor in Emergency Management- Summa Cum Laude. It was a great ceremony! We are very excited for this next chapter in our lives! He starts working for Texas Instruments on the 24th of May, and is anticipating that new venture. We plan on being here in Dallas for at least another couple of years- maybe 5 and then going on to getting Levi's PHD from another university. Which university? That is a good question- he would like one that does a Masters and a PHd program in one.

This time every year my Mom gets excited for the grand 'ol Kentucky Derby! Normally I would be posting this on my baking blog but hey... I decided since things are super crazy right now I would just keep it simple and post everything here. My Mom made all of us kids a "Hale Family Favorites" Cookbook last year for Christmas and with each special recipe she included thoughts and memories about how this recipe had an effect on her life/ the story behind it. In spirit of this weekend I am going to share her entry for her "Kentucky Derby Pecan Pie".

"While working at the Church Office Building in Salt Lake City during my college years this recipe was introduced to my co-workers and I by Bronna Hall, a native Kentuckian, during a Kentucky Derby weekend. It was a family favorite of hers and has been a family favorite of ours through the years." - SSH 10/27/07

Kentucky Derby Pecan Pie
Bronna Hall

3 eggs
1/3 cup melted butter
dash of salt
2/3 cup sugar
1 cup dark karo syrup
1 cup pecan halves

Mix first five ingredients and then add pecans. Pour in to a 9" unbaked pie shell. Bake at 350' for 50 minutes or until the knife comes out clean.

Yeild: 1 pie
